OK, here she goes again. A food blogger without a recipe. Sigh. I know. I have a problem. I am trying to get better at this, I promise. But I am lazy. I can’t be bothered to count out the number of sundried tomatoes I use, or how much basil I chopped.
So, this chicken is stuffed with sundried tomatoes, basil, and feta. Even if I wanted to give you exact amounts, it would do you no good because how do I know how big your chicken is? I don’t! So stuff it (OK, this time I flattened and rolled), pan sear it, and finish it off in the oven!
We had this over some wild rice mixed with spinach, mushrooms, garlic & pine nuts.
