I saw this recipe when Kenji posted it, but I was put off by the requirement for a special pan and special cheese. I’m glad to see a review – by someone who has a solid basis for comparison – that says neither of those are necessary.

Definitely not necessary. I do wish I had found the cheese, though! Gonna have to smuggle some back next time or get it shipped.

My only exposure to Detroit Style pizza is by that one “Pizza Pizza” chain…

Not the best exposure. Not the best… 😩 Give Union Squared a try in Revival Food Hall. Much better representation.

Hi Leigh. Sorry, for some reason my comments are showing up in my dashboard, but not publicly. Yes, my dough did form a tight ball. A little sticky, but it gathered into a ball well and relatively quickly.
