California Club Chicken Burgers

As you can tell, I’ve been on a bit of a burger kick lately.  I love burgers, don’t get me wrong, but for some reason, I don’t make them all that often.  I was brainstorming burger ideas when I thought of a sandwich I get at a local store that has chicken, bacon, avocado, and chipotle aioli.   Of course, I always get it sans aioli, since you know my distaste for mayo.  I decided to swap out the grilled chicken breast for a burger and the avocado for some guacamole and voila!

This burger was quite tasty and pretty healthy.  Yes, there is bacon on it, but just one slice per burger.  Guacamole/avocado is full of good fats, and I used chicken breast for the patties, so they were nice and lean.

California Club Chicken Burgers

Serves 4

1 lb. ground chicken
1/2 tsp. ground cumin
1/2 tsp. oregano
1 clove garlic, finely minced or pressed
3/4 tsp. kosher salt
ground pepper
4 thick cut slices of bacon, cooked and cut in half
1/2 cup guacamole or 1 sliced avocado
4 toasted buns

Lightly mix together the chicken, cumin, oregano, garlic, salt and pepper.  Form the mixture into 4 patties. Grill, pan-fry, or broil the patties until cooked through.  Top with 1 slice (2 pieces) of the cooked bacon and guacamole, and serve on toasted buns.

  1. Chicken burgers are my favourite. It looks amazing and must definitely try them with the guacamole but although I love bacon as well, I usually avoid it.
