Oatmeal Toffee Bars

It may be hard to tell given that six of my last eight blog posts are sweets, but this blog isn’t turning into a baking blog, I swear.  I only have two more holiday goodies to catch up on and then there is a good chance I will be sweets-free for a while.  I’m pretty sure my overhanging gut will be appreciative.

When I was making up gift boxes, I already had cookies and chocolate, so I wanted something that was neither. I decided to go with an oatmeal bar recipe because it wouldn’t have to be refrigerated like a cheesecake or other bar, and didn’t have nuts or chocolate in it. I am a huge fan of nuts in my baked goods but am cognizant of the fact that many are not, which is why I try to limit them amount of nutty treats I include.

I came across these incredibly easy to throw together bars at Hersheys. com. They have a great blondie-like base with oats added. I love the combo of the gooey blondie with the crunchy toffee. I never have quick cooking oats and always use regular. In this case I had thick cut oats on hand, so I just pulsed them a few times in my food processor before adding them to the recipe.

These were really easy. They tasted great, and got good reviews!

Oatmeal Toffee Bars

  • 1 cup (2 sticks) butter, softened
  • 1 cup packed light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1-1/3 cups (8 oz. pkg.) Toffee Bits, divided
  • 3 cups quick-cooking or regular rolled oats

1. Heat oven to 350°F. Grease 13x9x2-inch baking pan.

2. Beat butter and brown sugar in large bowl until well blended. Add eggs and vanilla; beat well.

3. Stir together flour, baking soda, cinnamon and salt. Gradually add to butter mixture, beating until blended. Set aside 1/4 cup toffee bits. Stir remaining toffee bits and oats into batter (batter will be stiff). Spread batter into prepared pan; sprinkle reserved 1/4 cup toffee bits over surface.

4. Bake 25 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Cut into bars.

  2. Elly, I hear ya…I have Xmas baking goodies to blog about too…might as well be January than July!!

    These look worthy of making the next december roster of treats…moist I say.

  3. I bought some toffee candies to make some cookies but never got around them so they’ll have to wait for next Christmas. I still have a lot of “sinful” recipes I haven’t posted which has to be done now but we do have to start eating healthier again.

  5. This recipe looks wonderful, Elly. What caught my grammar-nazi eye even more, though, was the fantastic use of the word “cognizant”. Brilliant! (Feel free to say that in the voice from the Guiness commercials!)
