Today I made a really, really simple soup inspired by Giada’s really, really simple tortellini soup.
To mine, I added spinach, thyme & chicken (the same chicken I used to make my broth which, incidentally turned out SO delicious this time.)
Anyhow, I actually took Giada’s idea to serve this with parmesan crisps, too. But, I made pecorino crisps. I almost always use pecorino instead of parmesan. I just like the taste a little better and when you are buying a huge wedge of cheese (like I do) it would be hard to go through two of those babies when there are only two people in our household.
