I just did an inventory of our freezer since we are moving in a couple of weeks. I am not even going to deal with the cupboards/pantry as of yet because that is a lot easier to transport. So, here is what I have. Please feel free to throw out some ideas to use up this stuff.
1 ginormous bag of shrimp
20 chicken drumsticks
1/2 lb. ground beef
1/2 pork tenderloin
chicken sausages: 4 Italian style, 2 chipotle flavored
2 chicken thighs
4 chicken breasts
5 portioned-out flank steaks (about 10 oz. each)
6 whole wheat tortillas
1/2 loaf ezekial bread
1/2 bag corn
1/2 bag peas
1 bag green beans (whichI only like fresh so I have no idea why I even have this)
1.5 bags mixed vegetables (again, where the hell did these come from?)
1/2 bag pitted cherries
1 small box snow peas
white wine, portioned out
1/2 loaf of tsoureki (our sweet Easter bread)
Not too bad, really. Nothing particularly crazy. But, if you are what you eat then Tom & I will be turning into a couple of overgrown chicken drumsticks. So, who has some ideas for those drumsticks? So far I am thinking of roasting them with potatoes, grilling them with some barbecue sauce, making Giada’s balsamic drumsticks again, and sticking them in a stir fry. What else ya got?
We are doing a small grocery trip tomorrow since I am going to attempt to make the pastitsio and need ground beef. I don’t plan on buying much more besides some fresh produce, eggs, and butter. I am hoping to freeze half the pastitsio in individual portions because I don’t think I will want to/have the capability to do much cooking right before the move.
I hate moving.
